Turkey Time!

We hosted Easter dinner at our house this year, and as revenge from not getting any left over turkey for the past few years we kept ALL the leftover turkey for ourselves. 

That was a mistake


We had so much left over food it was insane. 

So I decided to get a little inventive tonight for dinner and for once my creativity payed off so I thought I should document! 

This is what I had leftover in my fridge

Turkey
Green Bean casserole
Corn

I searched and searched for a casserole recipe that I liked and Didn't find anything. So this is my made up recipe

Ingredients:
2 tbs of butter
3 tbs of garlic
1 can of sliced mushrooms
approx 4 cups of cooked corn (or whatever you have left over)
ditto for the green bean casserole
4 cups cooked spiral pasta
2 cans mushroom soup
1 cup cheddar cheese
1 cup Frenches onion crisps

Method: 
Preheat oven to 350. Boil water and cook pasta as per package instructions
in the meantime, melt the butter in a pan, once it is melted add the garlic and mushrooms. Once those are sufficiently done add the leftover corn and green bean casserole. Let that cook on medium heat stirring occasionally. Goo back to the pasta, Once it is finished strain it and pour it back into the pot- Add the leftover turkey ripping it into small/medium sized pieces. Add the contents of the pan into the pasta, add the salt and pepper to taste, as well as the 2 cans of mushroom soup. pour the mixture into a large casserole dish, Throw it in the oven and let it cook for about 45 mins. after that time has passed, grate the cheese and sprinkle it on the top (ps. if your oven is anything like mine, you will want to change your heat from bottom to top so the cheese can get all melty) also add the onion crispies and let that cook for the remaining 15 mins. 

And there you have it! 

Turned out so yummy I don't have any to take a photo of!

Working Woman

So I have been working for Alberta Health Services for 2 months, and it just keeps getting better and better! 

The people that I work with are amazing, I love what I do. 

However. 

I have been struggling with keeping up with other things. Like everything. My house is a big mess (unless my amazing and supportive husband cleans which he has been as of late). I went to my parents house yesterday for an impromptu visit and realized it has been MONTHS since I have been there. My poor horse is fat and fuzzy, I am just having a darn hard time adjusting to the working life again. And this is the first time I have worked since out of my parents house ( I have been in school full time). Turns out there are not magical gremlins (moms) to follow me around and pick up after me or do my laundry if I ask. 

Mark and I also can't seem to agree on a division of labor when it comes to the household chores. We both work full time and Mark goes to school at night so we are on complete opposite schedules. My superwoman sister in law suggested a chore box for us to do together and just continually do all the time to keep up with housework which I am going to give a try, But I would love to hear suggestions if anyone has any good tips!
